Lemongrass and Ginger Grilled Chicken Breasts
with Thai Herbs and Coconut Peanut Dipping Sauce
Instructions:
Chicken: Heat in the bag in a simmering pot on medium / high heat for 8-10 minutes or puncture a small hole in the bag and microwave on high for 2.5 minutes.
Sauce: Serve cold as a dipping sauce for Chicken or any fresh local veggies.
Rice: Heat in the bag in a simmering pot on low/medium heat for 3-4 minutes or puncture a small hole in the bag and microwave on high for 1.5 minutes. Or reheat in a covered skillet set to medium until warm through.

Dried Penne Pasta
Instructions:
Fish:
Season Filets with salt and pepper on both sides. Sear in a hot nonstick pan with 2 Tablespoons of Oil for 1-2 Minutes perside.
Pesto:Toss cooked pasta in Pesto or use to top seared fish.
Pasta:Bring 4-6 Quarts of Salted water to aboil. Add pasta and boil for 11-12 minutes. Strain water from pasta and toss pasta in a few tablespoons of Olive Oil or Butter.

FAMILY OMELET

INGREDIANTS

2 Eggs

2 Tbsp of Milk/Cream

1/3 Cup of Any Omelet Fillings

2 Tbsp of Butter

1/4 Tps Salt & Pepper

DIRECTIONS

  1. In a mixing bowl, whisk together two eggs, 2 tablespoons of milk or cream, and one-quarter teaspoon each of salt and pepper until blended. Beat well for a fluffier omelet.
  2. Melt 2 table spoons of butter in a nonstick pan over medium heat until sizzling.
  3. Pour in the egg scramble and let sit for a minute or two, until the bottom starts to set. Use a spatula to spread the egg sgently and evenly around the pan.
  4. When the top starts to set, pour one-third cup of fillings. Flip the empty half over the fillings and serve immediately.
