One Dozen Oahu Farm Fresh Eggs

INGREDIANTS

8 large eggs

1/2 cup 2% milk or half-and-half cream

4 ounces cream cheese, softened

1 tablespoon minced fresh parsley

1 tablespoon minced chives

1/2 teaspoon minced fresh thyme

1/8 to 1/4 teaspoon salt

1/8 teaspoon white pepper

1 tablespoon butter

Additional minced fresh herbs

DIRECTIONS

  1. Whisk together the first eight ingredients.
  2. In a large non stick skillet, heat butter over medium heat.
  3. Pour in egg mixture; cook and stir until eggs are thickened and no liquid egg remains.
  4. Sprinkle with additional minced herbs.

 

Red Wine Vinaigrette
Instructions:
Fill the pot with one inch of cold water and add potatoes. Bring to a boil and reduce to simmer of 10 minutes. After 10 minutes check for tenderness, if not ready continue to simmer checking every minute. When ready drain and cut potatoes in half. Place potatoes in a large bowl. Add thinly shaved fennel and arugul a to the bowl with potatoes and toss with the vinaigrette. In a separate pan, sauté the bok choi with oyster sauce, ginger, garlic, and sesame oil for 2-4 minutes.
